Vendakkai Pal Curry (Lady’s finger in coconut milk)


I           Lady’s finger              200 gms

Ginger                        1/2″ piece 1 no.

Onion                          1 no.

Garlic                          4 nos.

Green Chilly               2 nos.

Salt

II           Garam masala            1 teaspoon

Coriander powder            1 teaspoon

Chilly powder             1 teaspoon

III          Grated Coconut            4 cups

IV         Oil                               2 tablespoon

Method

Cut Lady’s finger into 1″ pieces. Slice onion, ginger, green chilly, and garlic.

Add oil to the pan and sauté all these in oil well.  Add chilly powder, coriander powder, and garam masala.  Add 2nd extract of coconut milk and salt.  Cover and cook for 3 minutes.  Add the first extract of coconut milk and stir well.  Do not boil.  Temper with mustard and curry leaves.

Ladies finger Sambar Masala Fry


Ladies finger                         500 gms

Onion                                      1 no

Green chilly                            5 nos

Salt

Sambar masala                       1 teaspoon

Oil                                           2 tablespoon

Method

Cut ladies finger roundwise.  Add oil in a pan and sauté ladies finger.  sliced onion, and green chillies.  After frying well add sambar masala and salt.  Stir well and serve.
