Muringakkai Pal Curry (Drumstick in coconut milk)


I            Drumstick                  3 nos.

            Ginger                        1/2″ piece 1 no.

            Onion                          1 no.

            Garlic                          4 nos.

            Green Chilly               2 nos.

            Salt

II           Garam masala            1 teaspoon

            Coriander powder            1 teaspoon

            Chilly powder             1 teaspoon

III          Grated Coconut            4 cups

IV         Oil                               2 tablespoon

Method

Cut drumstick 3″ pieces. Slice onion, ginger, green chilly, and garlic.

Add oil to the pan and sauté all these in oil well.  Add chilly powder, coriander powder, and garam masala.  Add 2nd extract of coconut milk and salt.  Cover and cook for 5 minutes.  Add the first extract of coconut milk and stir well for 2 minutes.  Do not boil.  Garnish with mustard and curry leaves.
